I have been wondering or trying to access the same, but the Portenta H7 is a dead product, specifically asked Arduino to provide spec sheets and tech specs on the the CAN Bus connection through the 80 pin connectors and they went silent.
The Portenta is dead, but then again, it was never alive...just marketing fluff. Luckily we got our first set of boards for free so our only loss in investigating the Portenta as a solution was some time.
It's disappointing, as they are GREAT boards, very well built, very well designed and thought out, just no professionalism behind their product, which is kinda important if you're gonna put "pro" in the name...

Is there any documentation available to learn how the CAN BUS is working with the Portanta H7 ?
At the hardware, is it working at 3.3V or 5V ? Could not find this info on Arduino web site nor on the STM website.
And at the software level, is there a library available or a documentation explaining how to setup the CAN functionnality ?
Content for Portenta H7 is currently in progress. You can see the first set of tutorials available in the Pro site now. Your feedback will be taken into consideration to produce a CAN BUS tutorial as soon as possible.
Regarding your second question: Portenta H7 operates internally at 3.3V. However, when powering the board via USB-C type cable 5V must be applied.
