Possible to use 3.3v version of sensor on 5v Mini pro?

I have an infrared thermometer sensor with breakout board (
GY-906 Mini MLX90614ESF-BAA-000-TU-ND) and a 5v mini. Is there a way I can still use the sensor with the 5v output of the mini?

Yes, there are many ways but the simplest for you would be to use a level translator. They are very inexpensive. This response is to help you get started in solving your problem, not solve it for you.
Good Luck & Have Fun!

You need a 3.3v regulator to power the device (plus an I2C level shifter).

I'm a bit new to Arduino and wiring in general, wasn't sure if it was even possible for it to work together.

As a rule of thumb: all sensors and microcontrollers can work together. The question is generally "how".
