Power Jack for Big Easy Driver

Does it matter what you use? Adafruit has some panel mount jacks, I just need to know if I need to keep an eye on their ratings or if they are more or less universal?

I'll be using this battery, with a cable run to the board, just need to figure how to connect it up properly and safely.

Do you mean 4mm jack plugs and sockets? Yes they are pretty universal (4mm
is unambiguous!) in all sorts of bench equipment, but the current ratings will vary
a bit by manufacturer, a quick search should show the sorts of ratings they have.
Make sure the wiring is up to the current too.

It would be impressive to burn out a 4mm jack, I suspect the likeliest failure mode
is overheating on sustained high currents and possibly welding in place on extreme
current events.

Honestly, I was looking at how to power this the wrong way I believe. I think I am better suited powering through vin/grnd on the arduino itself and just jumping power to the driver board.
