Does anyone have an example of a power jack wired to a perf board? I am new to electronics, and am not sure what the best way to do this would be. A visual would help out a lot!

You get 2 short pieces of solid 18gauge (1mm diameter) wires and solder one of them to the BACK pin and one the SIDE pin... now you can insert it into a bread board.
The BACK pin is +V and the side pin = GND... but be sure to test with a meter first.
I used a CP-102A-ND from Digikey. It fits board with .1" x .1" holes.

I used a CP-102A-ND from Digikey.
Those are the same ones I use for my stripboard 'Duinos. They work very well :).
I use a small drill and make two slots in the board and push it into the board. Then either bend over the tabs or thread some tinned wire through the tabs to solder to adjacent board pads.
