I want to study the power consumption of the ESP32 ESP-WROOM-32 NodeMCU development board. I only have a multimeter and I am powering the board through the usb of the computer, is there any way to measure the current through the usb cable without breaking it ?
On the other hand, my board has a 5V pin for the power supply but I can't find information about if it can be powered at more voltage. Is there any datasheet where I can check it?

That isn't going to give a terribly useful result, I'm afraid.
Especially with radio devices like this, the current is very "peaky" - a plain multimeter will not be able to show this.
Can you not find an old USB cable that you could cut?
Maybe look at some USB breakouts:
I think there are ones that give a through connection for doing exactly this?

Not really, measuring current without breaking a connection is not so easy.
But there are numerous power monitor devices that you can put in series with a USB cable that have displays that will tell the the current in use, the mAhr consumed over time etc.
