pressure sensor signal units

hello
I am using the MPXV5050GP pressure sensor to detect a pulse in a blood pressure cuff.
I build an amplification and a filtering circuit board to get a workable signal, but i cant understand what are the units i am getting from the sensor. the average amplitude is about 500 "something", but i can get values that are higher than 800.
are the output signal in volt, mmHg,psi, pascal or what?

I added a photo of the signal plotted in a GUI i builded

The pulses have no units. They are relative to each other only.

The pressure of the cuff will change the level. There is no calibration so you have no units.

The datasheet says 0 to 50 kPa = 0.2 to 4.7 Volts, what did you use to make the graph? What do the numbers on the left side (0 - 1000) mean?
If you built the board, if you put 1 volt in, what comes out?
Here's a link to the datasheet.

lol that's my question! what do they mean?
I used CVI program to build a GUI and just present the signal as-is. i cant plug it now to 1V but when i build it i got a more or less 2.5V amplitude from it...
