ADCs and DACs are linear with very few exceptions (and the datasheet will tell you if its doing something
like log encoding of 8 bit audio for instance). One of the key specifications for ADCs and DACs is the
deviation from linearity, measured in LSBs (or even in fractions of an LSB).
