I know that the libraries work to some extent for processing 3. I'm about to embark on a large project though and I would like to use processing 3 (because it has much better support for larger projects) but I would also like to get an idea of exactly how they play together on a bigger scale than my little experiments. Importantly too, is there an arduino library for processing 3 coming anytime soon?

Not likely. Processing is a Java application that runs on a PC. There is not a hope in hell of it running on the Arduino.
