Processing 3 or Unity 5 for IMU processesing

We are implementing a system, which should be able to visualise a 3D figure of the user from 10 body-worn IMUs. However we are wondering whether we should use Processing 3 or Unity 5 for the best performance with minimum lags.

We favour Unity 5 with C# scripts because of the extensive documentation and support.

What do you guys think? Unity, Processing or perhaps a third option?
