As they only have two pins, one for plus and one for minus, I am wondering how to wire them up in order to bring the ping example to life.
Can anybody help me further?

well, this is nothing like the ping except they are both ultrasonic. This is just the transducer. in order to measure distance, youll have to create a circuit to generate a loud ultrasonic pulse, then another one that is tuned to receive the pulse without triggering from noise.

You're better off buying a complete unit as they are only ~$25US.
Sparkfun and others also sell them.
I have a few and they work well and are simple to use (ASCII output or analogue voltage)
