Questions about how this works

I don't know where the documentation is. Questions:

What is the difference between watching and tracking? It seems I have preference options dealing with that, but don't know what it means.

Specifically for someone who answers a fair number of questions, what preferences and settings do I need to have? I want to see the new posts in a category, and would rather everything be in strict reverse chronological order. I'd like all replies to show up as replies to the thread, not replies to replies. Could someone experienced at helping answer questions share your settings?

On the old board, I could manually control when the topics in a category were marked as read, and therefore no longer new. Is that possible here? I don't want that to be time based, and I don't want it to be since my last visit because then I have to finish going through all the new stuff every time I come here, which I may not have time to do. So where is the manual control to mark everything as read?

The new forum framework is Discourse, which is very popular. So you can pretty much just add the "discourse" keyword to any Google search to get the answer. Discourse doesn't have traditional documentation. Instead they have the https://meta.discourse.org/ forum. The FAQs section of that forum seems to have some good information:
