I use a function to deal with sensor errors that triggers a soft reset of it. I also activated the internal watchdog but no idea how to deal with the LCD. Is there some way of checking if it's working properly? another way would be begin it periodically
The MCU itself may be stuck by an I2C error. For example a noise spike may generate a START condition. The MCU thinks some other Master took control of the bus and forever waits for STOP that will never come.
