I want to re-programme a very old ATmega8 chip on its retro arcade board.
So far I have fitted a module to provide ISP programming connection.
Using the Arduino IDE I have a test programme that is valid; the problem is that the IDE seeks to use com port 6. Unfortunately my computer does not have such a port - only com port 3 is available. So how do I change ports. The IDE will not let me change!

You are supposed to select the COM port to be used. Use the device manager to see the complete list of recognized ports.

Please provide a detailed description of exactly what evidence you are basing this statement on.
For example, did you see that port number in the Windows "Device Manager"?
When applicable, you select the port Arduino IDE will use for uploads from Arduino IDE's Tools > Port menu.
However, some ISP programmers do not use a serial port. If you are using one of those programmers, then the Tools > Port menu, and any serial ports present on your computer are completely irrelevant.
