It's possible to listen (or read) from 2 different peripheral device via BLE as shown on figure below ?
I'm planning to do this and send the data to AWS.

Yes it could be done. I am to tired to do your research for you, Google will be a big help and you should have most of what you want in a few hours. You can always hire somebody to do it for you, there is a section here for that.
