Read the motor command of a rc control

I want to put the arduino between the rc receiver with integrated motor driver and the dc motors themselves. At first I only want to observe, and later manipulate the motor speeds. Is it better to use AnalogRead() or PulseIn() to read the motor speed?

As the individual channel outputs from the R/C receiver are digital PPM (Pulse Position Modulation) signals you have to read them as digital signals so PulseIn() is the method to use.
