I suspect the 5V from Arduino is not delivering enough current for the receiver, I am not certain what the current limit is, but I think it's a mximum of 100mA. I would suggest you power the RC receiver via a 1Amp 7805/7806 voltage regulator taking it's input from the 11.1V LiPo battery, so you still have one battery only.
