Real time monitoring of high voltage, high current power source into the laptop

I am a Materials Scientist, trying to work on an Electrochemical process where we will be using a 60V, 15A switch mode power supply. We need to monitor the voltage and current over a time period of 8 hours for our process. We need to the current and voltage data from the source every one second. Is there a way to tap the LED display of the power source where it shows the voltage and current, and get the voltage and current data over time (second) directly into the laptop for real time monitoring?

I would appreciate any kind of feedback.

It depends somewhat on how the LED displays are wired. What is between the power supply main processor and the display? How many pins does the display have? How many digits does the display have?

I have no personal experience with OpenCV. But this came to my mind as you described that the power-supply has a display.

So you could ask in an openCV-Forum with a picture of your power-supply-display if picture-recognition would work reliable in this case and if it could be fast enough as you need a value every second.
