Hello people, I need you to recommend me what high performance sensor can I use to measure temperature and humidity in grains and seeds? thank you.
I would use a soil hygrometer, not an air hygrometer. I would use a K type thermocouple probe versus a weather station type sensor
I have no recommendation for specific sensors

Do you actually want temperature and humidity? Or moisture content?
Low cost humidity sensors measure relative humidity, in the 20 - 80% rH range it is extremely difficult to manufacture better than ±2% accuracy, the only way of doing that is with chilled mirror sensors (read 10K +).
Temperature is a bit easier, a standard on chip PTAT type is usually about ±0.5°C, an NTC type can be as ±0.1°C, you pays your money and make choice.
In this application suggest you look at our T9602 range, it is already protected and has seen use in the same environment.
NB. Anything in a grain silo needs be incapable of generating a spark, so all very low power, even ATEX approval may be needed dependent upon local regulation.
