Remote temperature sensing over 80' untwisted pair

My dads house has hot water heating with a zone for most rooms. Right now each zone is controlled by a mercury switch hanging on the wall which has 24vac running through it. What I'd like to do is replace some of the zones with temperature monitoring. What can I put at the remote end? I plan to try a DS18S20 with parasite power but I'm worried that the long untwisted pair of wires might get interfered with too easily.

Is anyone else sensing temperatures over long wires?

afaik this wouldnt be a problem as the output is digital and thus shouldnt alter your reading. Power over that distance may be a problem.

interference can be and is a problem with digital signals over long distances, since you have several wires going through an ethernet cable, why not provide the ds18s20 with 5 volt power?

I thought I read somewhere the 1-Wire protocol gets "tricky" on lines over 3 meters...
