I would like to reprogram my bread machine using Arduino. There is a person that has already managed to do this, and as a beginner I would please like a breakdown of what he has done.

It is for my wife's birthday. We cannot afford to purchase a dedicated machine to make sour dough bread .
Any wisdom or advice would be very much appreciated.

Most bread machines, are quite similar. They basically just have a motor, and an element. So the type of machine is not important. The Arduino needs to control the motor and the element, with input from a temperature sensor. Where shall I list the project?
Most bread machines, are quite similar and code you have from that guy Elfnor, what wisdom are you awaiting/expect?
Then it should be no problem to reproduce what the person did in the link you posted.
Study the steps in the link, reproduce them and if you run into problems, then perhaps reconsider your assumptions.
