Ok, did more reading and thinking and talking to folks.
I'm going to go with the larger touchscreen from liquidware, but I'm still unsure which device should do the number crunching for the sensors.
On one hand the arduino should do it because it can do those calculations at the same time that the touchscreen is busy doing display stuff. On the other hand the lcd's chip is faster.
