Hi,
Welcome to the forum.

Yes that will work, you need this interface PCB for the arduino.

A link on that site points you the library to read the output of the PCB.

Can you tell us your electronics, programming, arduino, hardware experience?

PT100 sensors need a preamp. The preamp is expensive.
A (waterproof) DS18B20 is a cheaper and better option (for temps <125C).
