Safety thermostat sensor?

I would like to find a low-cost thermostat device that will switch (open/off) 120v. I saw one in a soil heat cable that would probably be perfect, but I cant find it (marked on it is: 04t-030f). Doing some searching, I came up with something like this: http://www.emersonclimate.com/Documents/White-Rodgers/catalog_06_pages/Cat_06_pg0089.pdf (at mouser: http://www.mouser.com/ProductDetail/Stancor/3L11-85/?qs=0703g%252bcHv%2F5eI9Ugtx4b2g%3D%3D)

Does it make sense that this emerson thermostat device would work (switch OPEN / OFF) the 120v circuit when the temperature hits 80f?

Or are there any other suggestions?

As this is an Arduino forum - why not using an Arduino with a DS18B20 sensor and a optocoupled relay like - http://arduino-direct.com/sunshop/index.php?l=product_detail&p=171 -

Actually I am already using an Arduino with a temperature sensor (I have a few varieties of sensors I use) and in fact am using relays to control 120v devices (fans, etc.). However, this is more of a safety add-on for my arduino setup. It's rare, but I have had a couple incidents where my Arduino setup did not work as expected. So this thermostat is really a final hopefully fail-safe - if the Arduino does not turn off the circuit, I want this thermostat to do so. So I am just looking for confirmation that this part I found makes some sense, or for another suggestion. Thanks!

The thermal switch you have linked would work for your purposes. This kind of device you'd also find in coffee pots or such for overtemperature protection, but you also find them in "thermal plugs" or such because they're robust enough to take a lot of switching cycles.
