How can I save data in SD card? Is better use txt or. Csv?
Also my sample rate is 200Hz and I need to record for one ir two weeks, is that possible?

What do you think the difference is between a txt file and a csv file?
You have to give a better description of the requirements; e.g. how many bytes.
