I want to ask for help and information about optocouplers
and its efficiency in connection with sensors.

connect a thermal probe to arduino with which monitoring
the temperature, until there everything is fine, monitoring
works without failure.

the problem occurs in a place where there is electronic ring by the
number of signals and electronic equipment present.
in some moments the probe sends an erroneous signal (-127.00)
but it is alternated, then resets the correct reading.

I would like to know if I connect the sensor to an optocoupler it will eliminate
the noise in the signal?

Share your circuit diagram as without it no one can tell you whats best to add in the circuit.

As the optocouplers are concerned, you should have a look at PC817 and read its datasheet. They are mostly used for electrical isolation.
