Good Day everyone! I am on my final year on my university, and I'm trying to determine how can I classify which coffee bean was used to the coffee grounds using various sensors and parameters. This problem really caught my attention, but I don't have enough knowledge regarding this matter and I really wanted to pursue this one as this will help the coffee farmers in my community. Thank you so much and have a nice day!

Gas Chromatography (GC) or Gas Chromatography/Mass Spectrometry (GC/MS) is the way you would have to do this. GC separates the complex mixtures of aromatic compounds in coffee beans, then a detector (a MS or a simpler FID detector is used to quantitate the amounts.
There are no sensors at the Arduino level that are capable of doing this.
