I was wondering if there is a way to add a short circuit protection to a one wire sensor. I lost an Nodemcu 8266 due to one sensor shorting because the wire got damaged. Thanks in advance
Put a small value resistor (100-200 ohms) in line with the signal.

The DS18B20 should be powered from 3.3volt when using a 3.3volt processor.
The pull up resistor should also connect to the 3.3volt pin of the NodeMCU.
Then I don't see how you can damage the ESP8266.
Unless you short 3.3volt to ground, which can be avoided with proper wiring and heatshrink.

The wire got ripped and shorted until the controller died.
