I doubt if any new ones will be made. Who would buy one?
They have a serious design flaw. They are expensive.
They only fit Esplora. Who owns an Esplora? Who would want to buy an Esplora?

They were perfect for small projects for students in our company. So will other displays from Adafruit, for example, work with an Arduino?
Adafruit displays are designed for 5V Arduino.
The small Chinese 160x128 displays are for 3.3V GPIO.
You must decide what you want your students to do.
e.g. plug in a shield and concentrate on software.
or design the level shifters, hardware connections etc ad not worry about the software.
