Smoker Temp control

I'm new with this kinda stuff and need help on a project I would like to make. I have a large smoker pit I would like to control the temperature. I wanted to put a temp probe in the pit and run it to the board and a fan at the inlet to the fire box. When the temperature goes down the fan will turn on. I need it to stay at 250F. Also if the temp gets higher than 300F and below 200F a audible alarm will sound. So what I need help with is, what do i need to buy to do this and the code. So pretty much everything I need to make this happen. Thank you

This would be a very cool project and not too complicate--i've thought about doing this myself

Measuring temperature is easy and can be done a few ways. Given the operating conditions i'd look for a sealed temperature probe.

Turning the fan on/off can be done with a simple relay shield (basically a signal goes from the arduino to the relay and that relay can control say a small computer fan.

You could get a 2-relay shield and have the other relay turn an alarm on off. A car horn may be excessive but your call.

The code for this should be very straight forward pseudo code would look like this

in the loop() routine,
MeasureTemp
if temp is > x turn fan on else turn fan off
if temp is > y sound alarm for 5 seconds
end loop

We'll (I'll) be happy to walk you through this when you are ready to move forward.

This video shows using a thermistor and has source code--but I would use a more durable temp probe.
