well, i've noticed all email address are marked as "hidden", mine as well...
But under my nickname, near the PM button, there is a mail button with "mailto:"... for the love of every bot 
and i can't find a way to eliminate this mail button

It is visible only to you (and to forum administrators). If you try to signout you can see that the email is hidden.
Confirmed. I noticed the same thing yesterday. Signed out and it was gone.

edit: maybe there's a way to set up visible email?
members can see the others emails, that is part of being part of the community.
Maybe you are seeing someone that set to "hide email" option to off.
