New to Arduino, does anyone know if it's possible to stack the Adafruit wave shield with the DFRobot LCD Keypad Shield (or similar). Obviously I'd want the LCD on top so it's visible, does the volume dial prevent anything being mounted above the wave shield? Or would it not work period. Had a search and couldn't find anything.

I built mine with stacking headers (ordered separately). That gives enough clearance to mount another shield above it. I built a DIY Shield with various circuits, and it mounts above the Wave Shield, which is plugged into a Duemilanove.
