Since they are two very different things that only differ in the capitalization of the first letter, this causes a lot of confusion for beginners. Thus, it's very important that the reference correctly capitalize these words. The page string.adoc is documenting the second item in the list above, and thus it should not capitalize the word string unless referring to the first item. It seems these changes were made in response to https://github.com/arduino/Arduino/issues/7314, which makes little sense because that issue was regarding the capitalization of Serial, and had nothing to do with string or String.
