Synth vs raspberry pi for live music with arduino

I'm using an Arduino Leonardo and a plant as a capacitive sensor to generate and send midi data.
I want to receive the midi data on a small and portable device that will read and play music.

After some research, I found two options: a synthesizer and a vst hosted on a raspberry pi.
Does anyone know which is better for achieving what is shown in the video? of course, I need it to be as low latency as possible.
