My plan is to create a system where every time the laundromat is used, the information will be saved in a database. This way, my sister-in-law can verify if the daily profits reported by her hired staff are accurate. Is this possible with arduino?

What is the interface to the laundry equipment?
Where is the database being stored?
What sort of data / statistics are you looking for ?
What’s your experience with electronics, Arduino and connecting to mains powered equipment.
There are numerous ways to do it. The tricky bit, if your SIL feels that such a system is necessary, is to do it in such a way that it's hard for the employees to game the system.
I'd look at how other laundromat owners solve the problem.
