A little update on the project:
- I bought a wireless Nunchuck controller for Wii

which thanks to this library http://www.gabrielbianconi.com/projects/arduinonunchuk/
I was able to read the analog joystick values as well as buttons and accelerometer! - I bought a cheap wireless mouse
- Decided to eliminate the monitor to have a lighter and smaller device to handle
Now I move to Processing, I'll post pictures and videos if something interesting comes out. Thank you for the help!
