On the Duemilanove, the jacks "headers?" for the digital and analog pins; what type of jacks are they called? I would like to have a few " jacks, wiring harness, plugs?" for them. Does anyone make them? Is the only way to connect to them with single wires pushed into the jacks?
Any help would be greatly appreciated.

If nobody made them, how'd they get on the boards? You can find them at almost any dealer that sells Arduinos and other electronic components, or you can source them from bigger part vendors like DigiKey or Mouser.
This is a row with 40 holes, but you trim it down to size.
These are various sizes, and extra long pins to grow your board DOWN as well as UP.
The pins that fit into the female headers are 0.1 inch single-in-line header pins. You can buy them in longer strips and break off as much as you need. Then, you can use heat-shrink sleeving to insulate the soldered connections.
