I want to build and small but large rover 3 ft wide and 4ft long.

The plan is to have it to avoid opsitcals. I will need to use and bunch of sensors. Probably a few for each side.

Is it possible to have one pin for multiple sensors? I am assuming no.

I would like to use the other pin for other things, it may get crowded

But I do know you can use a 2 wires to for multiple encoded devices on other devices with a encoded and a decoders.
Can this be done with a arduino?

I'm not sure what this was supposed to mean. If you have trouble with English then we have other sections in many languages. Perhaps there is one where they speak something you're more familiar with.

To avoid "opsitcals", one should definitely use the appropriate sensors. And as many as it takes.

Its normal for any kind of “emergency stop” signal to be a wired-OR, so that lots of sensors
can each trigger it. But that requires either diodes or sensors with open-collector active-low
outputs.
