Touchscreen wont rotate

Why touchscreen is not landscape if I set display landscape at mcufriend display examples?

The Touchscreen is glued to the TFT panel. The wiring is fixed.

Touchscreen.h library returns the ADC values for Portrait X, Y.
Touchscreen_Calbr_native.ino reports the pins and calibration values (for Portrait)

Look at the Touch_shield_new.ino example.
It maps the (Portrait) ADC_X and ADC_Y values to the pixel coordinates for your rotation.

Yes, it might seem a good idea for a Touch library to do these calculations for you (and your rotation).
Historically, Adafruit_Touchscreen does not do this. It would require knowledge of your screen, GFX, ..., calibration values, ...
Likewise, Adafruit_Touchscreen could restore pinMode() for XM, YP but it does not. (not all screens share TFT pins)
