It looks like the IC takes RF in, does all the tuning, signal extraction, ADC, and then puts the data out on a differential pair, LIF_P and LIF_N. I am going to make a cautious guess that the that data rate is going to be too damn high for the Arduino to handle. How you consume that high speed digital data and present it on a display, I don't know (ASIC or FPGA?), but I do know an Arduino won't be of much help. Sure, an Arduino can probably control it via the I2C port.

They only provide short data sheets for even the last generation of this product:

They don't say so directly, but this looks like an NDA product so good luck getting any documentation. What is your interest in this IC?

Well quite... probably sample rate around 25MSPS, 2 channels at perhaps 8 or 10bit... ie 500Mb/s over LVDS

It sparked my interest when I saw i2c :) that is all lol

Yup - a few years ago we had someone get all excited because they saw a spec for a mobile phone camera with I2C interface, but of course, that was only for command and configuration, not image data.
