Would it be possible to use these buttons with only 2 wires?

(yes, I understand the main difference would be that the button always reads HIGH and then goes LOW when pushed down).

It doesn't say that!
It uses a push button that happens to have 4 connections, however two of them are the same electrically there are only 2 real connections on that switch.

So it would be, in fact, possible to take out one of those wires, and just wire it up as
