I was wondering if it was possible for an ultrasonic sensor to be used to start a timer? Not just timing when it detects an object, but starting a timer once something passes in front of it and continues after that object is gone.

Start the timer when the object becomes detected. Not difficult to do. Where are you stuck ?
It might work, but it's not really the right kind of sensor for that. It could easily miss a fast moving object.
A beam sensor would be better, using IR or visible light.
