A USB Host shield is used to allow an Arduino to work with a USB device that is a slave. If your USB device is something, like a thumb drive, that you can store data on, then, yes, you can use the USB Host shield to make a data logger. It will NOT be a trivial task. Using a SD shield will be far easier.
