I have trouble understanding why there is 5 wires, when dealing with a USB to UART converter. From my understanding, the UART should only have 2 outputs (RX and TX)?

You always need a ground reference, there's TX and RX, and there's flow control (RTS/CTS or DTR/DSR). There could be a sixth wire for Vcc as well.
