I am looking to take in and process the output of a sensor a which is in SLPM units
the sensor is FS2012-1100-NG by IDT

how can i go about this
using arduino UNO
The analogue output would probably be easiest. It's ratiometric so just work with the raw output of the Arduino ADC.
I2C readout has a higher resolution, and you won't have to calibrate.
