I am attempting to create a forearm training device which looks like this (I don't know what it's called). Can I use this air pump motor with an arduino? It can provide pressure up to 100 kpa, but I don't understand how much that is physically. Are there any other alternatives I can/should use?
This is going to sound like a really strange and useless answer, but humour me... No you can't use that motor with an Arduino, but yes, you can use that motor with an Arduino.
Regardless of the motor (even if it's one of those tiny vibrators in a mobile phone), you never hook it up directly to the micro- that's the "no". But provided you stick some suitable electronics in between, you can almost certainly control it- that's the "yes". The diagram below shows how to do it, where the 12V would be the 6V your pump needs:
With the electronics in place, you turn it on and off just as if it was an led.
