Don't worry Mike. After literally messing around for hours with bit-bang SPI examples, I gave up and jumped over to I2C as a link between the Arduinos... far easier and works fine.
Still not really sure why having the USB programming lead connected to the PC has suddenly starting corrupting the existing SPI LedControl data however... odd
