Using Arduino instead of Digital / Arcade type joysticks

Could anyone please help me regarding this issue? I had tried finding but no result was found =(

I wonder if it is possible to use Arduino Uno to control the Maching instead of this type of Arcade-type joysticks :

If it is also possible to make 1 of the output of Arduino to use as a control for the Coin Insertion.

This is the 1st time i am using Arduino. I am also not very strong with all my coding and construction. Please Help.

To add-on, actually i was hoping to add the Arduino to a Toy Catcher Machine so that i am able to control the direction of the machine using computer / GUI instead of the Arcade Joy sticks
