Look for a rotary encoder.
I have a photo of the possible kaleidoscope. I'm planning to use the smaller one in the picture.
If I were to use a rotary encoder on its knob, how do I go about it?
I think that's the mechanical bit for you to figure!
I can see the problem whatever sensor you use whether rotary encoder, potentiometer or what-have-you; you need to locate it concentrically with the part you turn.
The specific advantage of a rotary encoder is that there is no limitation on turning it continuously.
If you wanted to encode from the periphery of something, such as the outside of your kaleidoscope part, you could print a continuous bar pattern on it (or on the inside of it) and use a pair of photo sensors as a quadrature (Gray) encoder.
