I have a seeed studio nrf, how is that different from the ESP32

Why do you ask that question? If you're talking about Getting Started with XIAO nRF52840 | Seeed Studio Wiki, it uses a different processor and possibly has different functionalities. You can compare the specs / datasheets; I'm not familiar with either.
