That is a very difficult thing to do as there are no standards for displays and many displays were produced especially for a single manufacturer, so no data sheet was ever published.
Unless someone has cracked this before there is slim hope of finding information especially once it has been removed. You don't even say what make and model your printer is.
Having now seen your pictures all I can say is yes they all look like that, so no new information.

A colour display on a printer?
That would be very unusual.
My last 2 printers both have/had colour, touch-sensitive LCD displays.

No, I just don't recall seeing a printer with a colour display.
Let alone one sufficiently old to be scrapped.

Cheap inkjet printers are not made to last, in fact they are probably made to not last, even good makes like HP. The one I took to be recycled last year, it couldn't be economically repaired, was maybe 10 years old and that had a colour LCD screen. It only cost around £80 I think.
